Ingredients:

  • 1/3 cup peanut butter
  • 2 Tbsp. oil
  • 1 cup sugar
  • 1/3 cup soymilk
  • 1 Tsp. vanilla
  • 1 cup whole wheat pastry or spelt flour
  • 1 Tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cup (or more) barley grains
  • 1/2 cup chocolate chips
  • 1/2 cup nuts (optional)

Directions:

  1. Preheat oven to 425°F.
  2. Mix peanut butter, oil, sugar, soymilk, and vanilla together until smooth.
  3. Add in whole wheat pastry (or spelt flour), baking soda, salt, barley grains, chocolate chips, and nuts.
  4. If using wet grains, put enough flour so dough retains shape when plopped on pan. 
  5. Bake on greased cookie sheet for 8 minutes. Let sit on pan for a couple of minutes.
