Ingredients:
- 1/3 cup peanut butter
- 2 Tbsp. oil
- 1 cup sugar
- 1/3 cup soymilk
- 1 Tsp. vanilla
- 1 cup whole wheat pastry or spelt flour
- 1 Tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 cup (or more) barley grains
- 1/2 cup chocolate chips
- 1/2 cup nuts (optional)
Directions:
- Preheat oven to 425°F.
- Mix peanut butter, oil, sugar, soymilk, and vanilla together until smooth.
- Add in whole wheat pastry (or spelt flour), baking soda, salt, barley grains, chocolate chips, and nuts.
- If using wet grains, put enough flour so dough retains shape when plopped on pan.
- Bake on greased cookie sheet for 8 minutes. Let sit on pan for a couple of minutes.
