Tradition hops have among the highest Humulene essential oil level of any hop, and these hops are great for getting "continental" hop character. They are herbal and spicy. I use them in my saison recipe and in german lagers.
Unlike American citrusy hops, they provide a fair amount of flavor following a traditional schedule of 30 minutes for flavor/15 for aroma--perhaps it's because our brewing practices mostly come from Germany that this works well with this type of hop, but less well with American ones.
